super simple and yummy!
makes 6 bars.
in a medium bowl mix:
3/4 C almond flour (low-carb alternative to wheat)
1/2 C dried cranberries
2 scoops vanilla whey protein
2 T flax meal
1 t nutmeg
1 1/2 t cinnamon
mix then add
2 egg whites
1 1/2 t vanilla
then make a frosting:
2-3 TB okinos greek yogurt
4 TB splenda
1 T vanilla
take approx. 14" of wax paper and lightly dust with flour. scoop the mix onto one side of the paper and fold the wax paper over it, then roll with rolling pin.
since this mix is so sticky, after rolling flat to a little less than 1/4" thickness and slicing into 6 pieces, you can stick it in the freezer so that you can work it off the paper if it's not movable.
put some parchement paper on a baking sheet and spray with cooking spray and bake at 375 for about 10 mins, flipping once.
once cooled a bit, frost with yogurt icing.
comes to approx. 15 g protein, 16 g carbs, 7.5 fat and 200 cals.
options:
add slivered almonds to mix or lay over frosting.
use cherries instead of cranberries and chocolate whey protein instead of vanilla.
if your diet requires more calories and fat, make the frosting with peanut butter instead of yogurt and use real sugar.
