this is a recipe i pulled from a magazine and then made my own. and i encourage you to do the same here.
spice mix (combine separately and alter to your taste, i usually double):
2 t garlic powder ( or 1 t diced )
1 t onion powder
1/2 t ground ginger
1/2 t thyme
1/2 t allspice
1/4 t salt
1/4 t nutmeg
1/4 ground red pepper
1/8 t ground black pepper
4-5 small chicken breasts
1/2 juice of fresh lime
1-2 red bell peppers ( and or green and yellow) cut thick
1 red tomato cut thick
1/2 onion in rings or thick cuts
combine all in container, shake and store in fridge for 1/2-3 hours. saute in large skillet until chicken is cooked.
*** when i served this at a dinner party i made a mango-pomegranate chutney and spread it over a plate of pineapple rings. it made a perfect side dish! ****
