Red Spice Rice

a mellow, low fat, low sodium take on typical spanish rice. *for a sweeter version, increase the cinnamon and add cooked carrots. or for a spicier version, increase garlic, and add tabasco and chopped onion*

1 C rice
1 14.5 oz can of stewed diced tomatoes, no salt added
2 C water
1.5 TB minced garlic
3 whole fresh basil leaves
1 TB dried oregano
1 TS paprika
1 TS chili powder
1.5 TS red pepper flakes
2 TS celery seed
1.5 TS cinnamon
1/4 TS sea salt
black pepper to taste

bring to boil, then cover and simmer 20 mins or until water is absorbed.
