adapted from the spring issue of clean eating magazine
in a medium pot (for which you also have a lid):
spray with pam then soften-
1-2 apples (the more the better)
1 pear
1 onion diced
1/8 chopped cashews
1/2 chopped jalapeno pepper (or 1 T tabasco sauce)
2 T fresh chopped ginger root (or 2.5 T ginger powder)
2 T curry powder
1 t cumin powder
1/4 t sea salt
takes about 6 minutes or so
add-
3/4 C low-sodium chicken broth
1/2 C fresh cranberries (i used craizens)
3 boneless chicken breasts diced to large chunks
cover pot and reduce to medium-low, simmer for 15 minutes. turn chicken once. cook chicken thru then remove all but remaining liquid to a serving bowl. at this point i threw in a very generous amount of cinnamon and extra curry, as well as about 1/2 T of coconut oil, low fat coconut milk can be used alternatively. then reduced the liquid to a thick sauce. pour over dish and serve with veggetable of your choice.
